Recipe | Watermelon Rice Krispies

June is here which means SUMMER HAS FINALLY ARRIVED!

I can't wait to make fun summer inspired recipes for the next two months before I leave for England. I will share as much as I can with you and hopefully inspire you to try these out as well.

My little sister and I saw Ingrid from MissGlamorazzi do these awesome watermelon inspired Rice Krispie treats in one of her most recent videos and we immediately knew we had to make them! She made a very healthy version but we knew our brothers and our dad would want to eat these so we went old school and used the traditional marshmallows and butter routine :) Ingrid always posts really yummy and exciting recipes that I definitely want to try.

Anyway, here are some photos of our process and the final product!
DISCLAIMER: We are not shown in any of these photos because we had both just showered after our 4 mile workout and were not looking so hot.

THE RECIPE:

Ingredients:
(We made three batches which totaled 24 slices)
One box of Rice Krispies
One stick of butter
Red food coloring
Green food coloring
Half a cup of mini chocolate chips
Two bags of marshmallows
Circle tins (3)
Two mixing bowls (one for green and one for red)
Nonstick spray
Wooden spoons for stirring

Preparation:
1 | BEFORE YOU DO ANYTHING SPRAY ALL BOWLS AND WOODEN SPOONS AND PANS WITH NON STICK SPRAY UNLESS YOU WANT TO CRY FOR DAYS
2 | Melt butter and marshmallows in microwave for 1 minute (the stir) and place in for another 30 seconds (then stir) OR  melt on stove at medium simmer
3 | After stirring the mixture, add the rice krispies (half the box in each bowl) and stir
4 | Add the food coloring to each bowl and STIR, STIR, STIR until your arms are aching to mix it and make it even (keep adding drops throughout stirring until you find the right color)
5 | Spray your hands, especially your fingers, and grab the green mixture first, outlining the edges of the pans
6 | Wash your hands and spray them again to add the red mixture for the middle
(Make sure to pat down and make it even)
7 | Wash your hands and add the seeds... I mean, mini chocolate chips! Definitely give them a little push down so that they stick in
8 | Place pans in refrigerator to cool for 30 minutes - 1 hour
9 | Take out and cut into slices of 8 per pan - place them on a large plate
9 | EAT AND ENJOY!!!
10 | Obviously document the finished product with a bunch of photos :)

What do you think? I think this is such a fun idea for a summer party or a surprise for your family on a Sunday night :)

  2. Omg, thanks for making this post. I really wanted to make these after I saw the video but found it hard to get Almond butter, especially because I'm the only only one in my family that likes it. I am so excited that there is another way to do it! :)
